An Australian winter favourite, the origin of the chocolate self-saucing pudding is unclear but what is clear that it’s a deliciously warming dessert on a cold winter night!


1 cup self-raising flour

1/2 tsp salt

2 tbs cocoa

3/4 cup brown sugar

3/4 cup milk

2 tbs butter melted

2 drops vanilla essence


1 3/4 cup boiling water

3/4 cup brown sugar

2 tbs cocoa


1. Sift flour, salt and cocoa into an ovenproof dish, then add sugar.

2. Stir in milk together with melted butter and vanilla essence.

3. Mix all the sauce ingredients in a separate bowl and then pour gently over the main pudding mix.

4. Bake at 180°C for approximately 60 minutes.

5. Serve with a dollop of double cream or a scoop of ice cream.
