This recipe comes to us courtesy of our call centre consultant Leonii, who remembers her grandmother making this from a much-loved community cookbook.
This particular recipe is a microwave version, meaning no more stirring by a hot plate waiting for it to thicken. Just pop all the ingredients in a medium bowl, cover and microwave on the defrost setting for six to eight minutes, stopping to stir every couple of minutes. Delicious!
2 lemons (rind and juice)
1/3 cup sugar
2 egg yolks
Combine all ingredients in a medium bowl. Cook covered on the defrost cycle in the microwave 6-8 minutes. Stir occasionally until thickened. Store in hot sterile jars.
