Pauline and Keith, from our Seasons Waterford West community,  shared their favourite recipe for when the weather cools down – the classic Pea & Ham Soup.

While this soup recipe might take most of the day to heat up, it is well worth the wait!

1 ham hock

2-3 sticks of celery, chopped

1 packet of yellow split peas

1 large onion, chopped

6 cups of water

  1. Put all ingredients into a large pot, cover it all with water and cook on low heat all day Approximately 6-8 hours.
  2. Remove the ham hock from pan.
  3. Remove the meat from the bone and coarsely chop it up.
  4. Add the meat back into the soup.
  5. Enjoy with crusty bread.

Along with sharing their pea & ham soup recipe, Pauline and Keith shared a few words of wisdom with us.

When asked what life motto they both live by. Pauline replied with “Treat other people the way you like to be treated yourself”.

Keith said his motto is “To make people smile”.
